Take the required portion of the idli batter and divide it into three equal parts. Keep one part as it is white color for tricolor idli.
Now wash and chop 2 carrots into smaller pieces. Then add it to a blender and add ¼ tsp turmeric powder, a pinch of salt, ¼ tsp lemon juice then grind it into a coarse mixture.
Mix it with one portion of the batter to make the orange color of the tricolor idli. Keep aside.
Then take 1 cup coriander leaves, then grind with ¼ tsp lemon juice and a pinch of salt into a coarse mixture or a puree.
Mix it with the third portion of the batter to make the green color of the tricolor idli. Keep aside.
Three colors batter is ready.
Take idli moulds and brush with a little oil. Meanwhile place the pot on a flame pour water into it. Place trivet inside.
Now pour the prepared orange color batter (one ladleful) into the mould.
Keep the idli moulds on top of the trivet.
Close the lid and cook on medium flame for 2 min.
After 2 min remove the moulds from the pot.
Then pour white color batter (one ladleful) for second layer.
Keep the idli mould on top of the trivet. Now close the lid and cook on medium flame for 2 min.
After 2 min again remove the mould from the pot and pour green color batter (one ladleful) for third layer.
Keep the idli mould on top of the trivet, cook on medium flame for 15 to min or until your idlis get cooked well.
Remove the Tricolor Idlis and serve hot with a chutney and sambhar.
