Heat 1 tsp ghee in a kadai, add cashews and raisins roast till golden brown and keep aside.
In a same kadai boil 4 cup milk.
Add 1/2 cup basmati rice and stir well.
Reduce the heat and let it simmer till rice is cooked and the mixture is thick.
Keep stirring once in a while to prevent rice sticking to the bottom and the sides.
When it is thick and creamy, add 1/4 cup sugar, 1/2 tsp cardamom powder, raisins and cashews. Mix well.
Cook for 10 min more. Rice Kheer Ready.
(Remember it will thicken still further when cool)
