Pumpkin Fry | Kaddu Ki Sabzi | Kaddu Ki Sabji Recipe | Pumpkin Recipe. Pumpkins are loaded with a variety of nutrients. Kaddu Ki Sabzi is a delicious Indian dish, it is a very easy and simple to make.

Pumpkin Fry

 1 cup Pumpkin cubed
 1 tsp Mustard seeds
 1 tsp Urad dal
 1 Dried red chilli
 2 tbsp Oil
 1 tbsp Coconut grated
 1 tsp Jaggery
 1 tsp Red chilli powder
 1 tsp Aamchur
 ¼ tsp Turmeric powder
 ½ tsp Garam masala
 A pinch asafoetida
 Salt to taste
 Water

Take a kadai heat 2 tbsp oil and add 1 tsp mustard seeds, 1 tsp urad dal, a pinch asafoetida and 1 dried red chilli sauté for 2 min.

Then add 1 cup pumpkin and sauté for 2 minutes, add 1 tsp jaggery, 1 tsp red chilli powder, ¼ tsp turmeric powder, ½ tsp garam masala, 1 tbsp grated coconut, salt to taste and ¼ cup water.

Mix well and cook for 10 minutes stirring in between.

Now add 1 tsp aamchur powder and fry for 2 min. Pumpkin fry ready to serve.
Best side dish for rice, chapati, puri, roti.
