Beetroot Mustard Curry | Beetroot Curry South Indian Style. Beetroot curry is a slightly spicy coconut-based curry. This is one of the quick and tasty recipe. You can enjoy this curry with rice and roti.

Beetroot Mustard Curry

 1 cup Beetroot chopped
 1 cup Coconut grated
 1 tsp Red chilli powder
 ¼ tsp Turmeric powder
 1 tbsp Ghee
 2 tsp Mustard seeds
 5 Curry leaves
 Salt to taste

Add 1 cup chopped beetroot, 1 tsp red chilli powder, salt and 1/4 tsp turmeric powder in a cooking vessel cook till the beetroot becomes tender.

Grind 1 cup grated coconut and 2 tsp mustard seeds in a blender until paste. You may need to add a little water.

Then add it in to a cooked beetroot, adjust the salt, now again cook for 2 min. Switch off the stove.

Now take a small pan and heat with 1 tbsp of ghee, 1 tsp mustard seeds. When they start to crackle add curry leaves. Remove from the fire and add to the beetroot mix.
