Aloo Bhindi Fry

For roasting:
 2 tbsp Oil
 10 Okra (Bhindi)
For Fry:
 3 tsp Oil
 1 tsp Mustard seeds
 1 tsp Cumin seeds
 1 Onion chopped
 1 Tomato chopped
 2 Potato (Aloo) chopped
 2 tsp Red chilli powder
 ¼ tsp Turmeric powder
 Salt to taste

In a kadai heat 2 tbsp oil and add bhindi, roast on medium flame without burning, now keep the crispy bhindi aside.

In a same kadai add 3 tsp oil, 1 tsp mustard seed, 1 tsp cumin seeds and add 1 chopped onion, sauté until it turns golden brown.

Now add 1 chopped tomato, 2 tsp red chilli powder, ¼ tsp turmeric and salt to taste, sauté on low flame for 1 min.

Add roasted bhindi, 2 aloo chopped and sauté on low flame for 3 to 4 min. Aloo bhindi fry ready to serve.
