Take a kadai heat 2 tbsp oil and add 1 tsp mustard seeds, 1 tsp urad dal, a pinch asafoetida and 1 dried red chilli sauté for 2 min.
Then add 1 cup pumpkin and sauté for 2 minutes, add 1 tsp jaggery, 1 tsp red chilli powder, ¼ tsp turmeric powder, ½ tsp garam masala, 1 tbsp grated coconut, salt to taste and ¼ cup water.
Mix well and cook for 10 minutes stirring in between.
Now add 1 tsp aamchur powder and fry for 2 min. Pumpkin fry ready to serve.
Best side dish for rice, chapati, puri, roti.
