Take 1 cup sugar and ¾ cup water, cook on low flame till sugar dissolves completely. Keep aside.
Now take a bowl and add 1 cup all-purpose flour (maida) and ¼ cup curd.
Add ¼ tsp salt, ¼ tsp cardamom powder, ¼ tsp turmeric powder, mix it.
Then add sugar syrup and mix it well. Make sure there are no lumps. Batter shall have thick dosa batter consistency.
Rest batter for 30 min.
Heat ghee or oil in a kadai and put one ladle of batter.
Cook on a medium flame, once it becomes light brown from the sides, slowly flip it. Cook until its sides becomes brown and crisp.
Take it on a ladle, press with another ladle and put it on a kitchen paper to remove excess oil. Mangalorian special malpuri is ready to serve.
