Soak 1 cup rice for 2 hours.
Drain off the water. Then grind rice with 1 cup grated coconut, ¼ tsp salt to a very fine paste by adding little water.
In a large kadai take 1 cup jaggery and 2 cup water, stir well until the jaggery dissolves completely.
Now add rice coconut paste, 1 cup water (1: 3 proportion) and ¼ tsp cardamom powder. Mix well.
Keep on low-medium flame and add 2 tbsp ghee and stir the mixture continuously ensuring that no lumps are formed. After 15-20 min it starts leaving the sides of kadai.
Grease a plate with ghee and transfer this mixture to the plate, spreading uniformly. Rest for 30 minutes.
Cut halbai into desired shape and serve warm or cold with ghee.
