Goli Baje Recipe | Mangalore Bajji Recipe. One of the popular udupi and mangalore cuisine recipe, made with maida. Goli Baje or mangalore bajji is a deep fried crispy and spongy evening snack recipe. In Karnataka Goli baje is familiar by different names like mangalore bajji and mangalore bonda.

Take a bowl add 1/2 cup buttermilk, 1 tsp cumin seeds, ¼ tsp baking soda and salt to taste. Mix well.
Add 2 chopped green chilli and few chopped curry leaves.
Now add 1 cup all purpose flour (maida) and mix well making sure everything is well combined.
Cover and rest for 3 hours.
After 3 hours, mix the batter again.
Now heat oil in a kadai, dip your hand in water and pinch a small ball sized batter and drop it in hot oil. Stir and fry uniformly on medium flame till it turns golden brown and crisp.
